HERB - Poke and Gill-on-the-ground

I have two volunteer plants in my yard that I would like to make use of this
year - Poke and Gill (aka Ground Ivy).  I wanted to process the Gill for
brewing an (unhopped) ale, but I can't find any specifics about harvesting
and actually using the plant.  I was also going to use the Poke as an ink
and/or dye, but (again) I can't find any specifics, like what mordant to use
for dyeing.  Any ideas, anyone?

P.S. I am aware that Poke is native to North America, and therefore "out of
period" for the SCA, but as it's already there and known to be a good,
natural pigment, I figured I at least harvest the ones the birds don't eat.
