Hi,
purple cone flower will come back from the roots.  And it gets nicer and 
nicer the older it is.  Leave the flowerheads on.  The butterflies and birds 
love them.  If I remember right you use the roots in cone flower, but don't 
quote me.
Trust me, the pineapple sage will will.  It gets bigger and bigger every year 
also.  I've actually had to pull out some and plant elsewhere so other plants 
beside it had room.
