Your best bet is to start your research by visiting a good book store and
start picking out books that answer your questions.  I have some
suggestions for you below:

Home Herbal by Penelope Ody
Growing and Using the Healing Herbs by Gaea and Shandor Weiss
Rodales Encyclopedia of Herbs

These are only 3 of many herbal books on the market, but they've served me
well in the basics of growing, preparing and using herbals in my everyday
life.
