What are you using to strain it now? The "mother" in my vinegar is the same
one that's been transferred from bottle to bottle every time I've made more.
Actually, I have a white mother and a red mother that I use all the time.
When I strain it for A&S or gift presentation, I use repeated straining
though cloth after a good and careful pour directly from the bottle. I make
sure everything is settled and the above vinegar is clear. Then I pour
everything off but the mother and an inch or so above in the bottle.
I take the old bottle with the mother and start a new batch. I take the
poured off vinegar and go through a series of letting it settle, then
filtering it through cloth. For the most part, this works, but if people
let the gift sit forever and not use it like it was intended, it will
invariably gain a cloudy layer on the bottom from a new mother trying
to start.
