I'd suggest making pickles with it.  I've got a good, simple pickle recipe 
from the late 16th century, I used it to make pickles with homegrown 
cucumbers and dill last year as part of a garden display.  I'm not allowed to 
make vinegar, my husband, the brewer, objects :).
