Ox & I did a beer batch a while back. He does whole grain brewing. I'd
been wanting to do a batch of braggot (beer made with honey in it) for a
while, specifically the braggot recipe in Hugh Plat's _A Jewel House of
Arte & Nature_ .
http://home.earthlink.net/~magdlena/plattbraggot.html
Plat calls for 64 gallons of strong new ale, but doesn't specify the
recipe for the ale. So, we took the recipe for 3 runnings of beer from
Gervase Markham's _The English Housewife_, which Ox had already redacted
for another project, and we made that to get the base beer. (Three
runnings refers to taking 3x amount of hot water and running x amount
through the same batch of grain 3 times. Gets you 3 sets of
progressively weaker beer - strong, ordinary, and small. ) We used the
stong running and redacted Plat's braggot. Then we used the weak
running to make "Ale with Honey" from Digby's _Closet_ which calls for
40 gallons of small ale. And Ox made a really excellent modern brown
ale with the middle running. We made 5 gallon of each.

They are interesting beers.
