Greetings, all!
I am taking orders for feral pigs that are ready for cooking.
We are buying these pigs from a trapper in Young county, delivery is available at no charge withing 50 miles of our home. We live in Azle;
These pigs weigh anywhere from 10 pounds + or -, up to 30 pounds + or -. That is dressed carcass weight.
The 10 pounders are $15.00. The pig is ready to cook and will serve 4 to 6 people.
20 pounders are $20.00, if you want them quartered, that is $5.00 extra.
30 pounders are $25.00, $30.00 if quartered, if cut up and ground meat is wanted, it is $40.00. We only do ground meat on the 30 pounders.
As hogs dress out at about 50% of live weight, we are talking about live animals that weigh 20 to 80 pounds or so. We don't handle pigs much bigger than this.
The heads are cut off.
When we quarter, you get all 4 legs, 2 rib plates, saddle, upper back, and the neck, along with heart and liver.
We go up and pick up pigs when we have a total order for 8 or more animals. We go on either Thurs. or Fri. and the pigs are ready for pick up or delivery Sun. or Mon.
After the pigs are processed, we keep them iced down till picked up or delivered.
On animals that range from 10 to 25 lbs, I cook by splitting the animal just behind the ribs, shoving the loin end into the rib end to make a more compact package; then season, wrap in bacon or fat (these are very lean animals, must be cooked with fat or they will be too dry), and in multiple layers of foil; cook for 6 or more hours.
This would be perfect for a feast or camping, cooked in coals. (I can prepare them for you, an approximately 10-lb animal costs $30). (and could weigh up to 17 or 18 lbs)
Please contact me for more information.
