A charger is a larger plate that sits under the plate that holds the food.
When a course is served, it always (well, ideally) gets served on a clean
plate, but the charger stays in place.

Well, the hurricane lamp idea is out.  Padraig says the autocrat told him no
open flames.  Any more ideas?
