I saw this last spring. The construction methods they are using are very manual. I believe they have to blast the rock, but after that, all of the stone shaping is done by hand.  They use mules to relocate the blocks and a period crane to lift them. They also use wooden sleds to pull the blocks from the quarry to the site. 

All around the site they have other support shops set up from blacksmithing to basket weaving. Pretty much everything they need to build this castle is made on site.
