I have been working on some new bread baking techniques, including a
long-rise, whole grain bread that ferments in the fridge for up to a week.
While not truly "period" it's closer to period breads that use natural
fermentation/leavening (like sourdough) and coarser, whole grain flours. So
far, I've had great success... and probably gained 5 lbs. The resulting
bread is chewy, with an even crumb and delicious,"two layer", very hearty
crust.

I will hopefully be making said bread (it bakes up in small round "rustic"
loaves) for ... something in the future. Basically, whenever I am no longer
chained to a cash register all weekend long. I'm currently trying to
negotiate a day off for Loch Yule.
