So where do I go to pull together documentation to support this name for a Irish female living between 1400-1450?  I have plenty of information on the legend of Scathach, but nothing on using it as a name in the SCA.  I have found a reference to it once in LoRs in the late 80's but it was rejected because they needed proof that a human used this name.

Oh it happened, but was extremely rare and apparently there is no known 
example before 1200 AD.
One I found was Bonner, which was Matronymic, but also was very late 
period and had Scottish influence. In fact, I even found a letter of 
SCA heraldic commentary wherein someone tried "daughter of 
Fhionnaghula" and it bounced.
Google Irish Matronymics and you should see plenty of stuff.
