And, regarding Venison:  If you're out hunting for
deer and are lucky enough to get one, be very careful
in the field dressing and the butchering of that deer.
 There is a gland on the hind leg of the animal that
is a scent gland and one nick of that gland will send
that aweful gamey, bitter taste throughout the meat. 

Bjorn and I process our own venison and we are
EXTREMELY careful not to hit that gland.  So careful
in fact that most of our dinner guests are amazed that
our venison tastes so much like a better, richer cut
of beef.  So many people turn their nose up at venison
because the meat was processed in a hurried, sloppy
manner and that gland just ruins the taste.
