Great ideas.  Perhaps the picture boards could be set up in several places.  Like mundane/persona doing a craft photo board set up in the A&S tent, court photo board set up under the Baronial Pavillion, etc.
 
Although the cutout boards with holes for heads and photos, is a good idea, will it really give people a good feel for our form of dressing-up and "make-believe"?  Vigdis, you are correct that to have garb for people to put on for photos would take more volunteers to keep track of the stuff, so it wouldn't accidentally "walk off", and to help attendees put it on, etc.  As you suggest, perhaps a pretty tabard or decorated tunic and belt would be enough for most patrons of the fair for a photo.
 
I think quotes would have to be brief.  Most fair-goers don't want to take the time to stop and read some lengthy piece.
 
The Hospitaler area should have brochures (from Namron, Wiesenfeuer, Eldern Hills, Northkeep, etc), a notebook ( or something) to take names and contact info for people who are interested to join, or want us to do a demo for their group, some of the picture boards showing the transformations, etc.  Of course, each group mentioned would be responsible for providing their own brochures.
 
Don't forget, we always need people to "walk the ropes" and talk to the crowds.  That is the best form of advertisement.  Members of the audience will ask questions about the fighting or the armor, and they can be directed to the various pavillions/tents to see our A&S, talk to the hospitalers, etc.  Some attendees don't realize that all the tents/pavillions in our area are one group...the SCA.
 
I've prattled on enough.  Hope some of the ideas help.

Danr and I were talking about this over breakfast, and came up with this:

What if the posters of SCA members were split, with one half showing the person in modern dress and the other half showing them in garb (two photos, photoshopped together)?  The text could say "Dean Hougen / computer sciences professor | Danr Rothrson / 10th c. Viking" plus the snappy quote about why he loves the SCA.  This could be another way in which we demonstrate the broad range of our members -- we have people from so many different occupations and backgrounds.  And by demonstrating the transformation, it might really help people imagine themselves as participants.  It's a Walter Mitty sort of thing.

(and because I know the obvious thing for me to do is to volunteer to DO all these things I'm imagining, I have to say that while I would help as much as I can, I am supposed to take it easy for the next month or so and cannot commit to head anything up.  If no one can do it this year, I'll volunteer for next year!)
