Yes they do, but some batches & peoples tastes may want a lower alcohol content. . . Killing the yeast helps control the carbonization after bottling.  It would be tragic to lose several (or More!) bottles do to re-activation of the yeast in the bottles; to much gas buildup and POP! goes the top.  There are problably more great reasons. . .but I haven't learned them yet!
