Mom always fried squirrel the way she'd fry chicken.  I liked the taste, but it was somewhat dry and stringy.

Has anyone tried burgoo?  Not the modern chicken stew, but the original frontier stew of squirrel, rabbit and chicken?  The slow stewing process makes the meat tender.

Hmmm.  I wonder how braising would work.
