[Northkeep] Venison Stew

Indeed, Im not sure I would co-mingle the juice and wine in a stew.  However, for the future if you are doing a venison roast, placing sliced apples or pears (especially the pears) on top of the meat after basting in a red wine sauce would add a nice fruity flavor.
