Anyone interested in BBQing should grab up the maple, as it makes a
wonderful smoke, especially for pork.  Warning:  Remove the bark before
smoking as it can cause a slight bitterness in the flavor.

I have plenty of wood on my place, as my son does tree trimming and removal
for a living.  I especially love it when he brings over pecan, as it is an
even sweeter woodsmoke than maple.  There's nothing like pecan-smoked
chicken.
