I hadn't really thought about it like that.  I knew that we did alot of prep-work and running around during an event..and yeah, clean-up.  But to see it on this scale is very impressive.  Thanks for posting this.

Pre-Event Planning
 
Event Steward - 60 plus hours making calls, organizing, preparing a budget, submitting the Black Star add annoucements, collecting a staff, collecting input from members, informing the populace, communicate with the officers to ensure that the activities related to their offices are within SCA policy.
Feast Steward - 20 plus hours researching recipes, redacting dishes, putting together a budget, and gathering a crewe
Marshal - 5 to 20 hours, collecting input, working up scenarios, committing marshals, arranging for lister personnel
Equestrian - 5 to 20 hours, planning, building equipment, committing marshals
A&S - 2 to 20 hours,  collecting input, working up the format of the competition/s, finding judges
Other competitions/Activities - pre-planning time varies according to their complexity, equipment and staffing needs.
 
Prep
 
B&B - (???hours)maintain communication with event staff to ensure that things are running smoothly. Make suggestions and/or decisions on final formats of competitions. Promote the event throughout the Kingdom both in person and by extending invitations.  Encourage the populace to volunteer, donate prizes or otherwise support the group in regard to the event.  Support the populace in their efforts to take responsibility.
Event Steward - (???hours)Take responsibility for the event, Maintain communication with event staff to ensure that things are running smoothly. Step in when needed to either do/or appoint someone else to do an activity or action when things fall. Gather pr5izes and make sure staff is on task. Develope the schedule of activities and event handout.
Feast - approx 20 hours shopping and 20 to 100 hours of cooking time dependant upon complexity.
Hat Lunch - Number of hours dependant upon complexity.
Invitations - 24 to 35 hours - 1 to 2 people
Site/Feast Tokens - 10 to 30 hours - 2 to 3 people
Gate (pre-event) - 3 hours - 1  person - to copy forms and ensure that the gate box has supplies. Get beverages and munchies for the gate.
Marshall (fighting) - 2 to 5 hours ensuring equipment is in good shape, copying forms, making sure that the fighting fields are in good condition.
A & S - 2 to 3 hours copying forms, ensuring placement of competition.
Waterbearing - 2 to 10 hours - collecting equipment, shopping for perishables, cleaning equipment, etc
Hospitilar - 2 to ??? hours - making sure equipment and clothes to be lent are clean, copying forms and handouts, etc
Other Activities - time varies according to their complexity, equipment, and staffing needs 
Populace of the Barony - Promote the event both in person and by extending invitations.
 
Pre-Event Site Set up
 
Clean:
Kitchen - 4 hours - 2 people
Kitchen Equipment - hours vary dependant upon need
Water Tank and Barrels - 1 day - 2 people and a pickup or trailer
Leaves/Branches/other debris - hours dependant upon need
Onsite Storage Room - 1 day - 2 to 3 people
 
Paint: 
List Field poles - 5 hours - 1 person
Kitchen outside - 5 hours - 1 person
Kitchen inside - 5 hours - 1 person
Equestrian Field poles - 2 hours - 1 person
Showers - 8 hours - 2 people
 
Mow/Cut:
Main Fields with tractor/bushhog - 2 days - 1 person
List field and common areas/close cut - 1 day - 1 person
Bushes along the front drive - varies - Defender 2004 2 days - 4 people
Persimmons on Equestrian Field - 6 hours - 3 to 4 people
 
Dig/Fill
Dig out Cattle Guard - varies - Defender 2004 6 hours - 6 people
Fill holes - varies
 
Spray:
For ants in main areas - 1 day - 1 person
For Poison Ivy in common areas - 1 day - 1 person
 
Haul:
Equipment from Storage Room - 3 to 4 trips - 1 and 1/2 hours each trip - 2 people and a pickup or trailer
Tents from Storage - 2 to 3 hours - 2 to 4 strong people and a pickup or trailer
Water - 2 days - 2 people
 
Set up:
White pavillions - 1 hour - 2 people - each tent
Green Tents - 2 hours - 8 people - each tent
GP SMall - 2 hours - 3 people
Gate (onsite) - 1 hour - 1 person
List Field ropes - 1 to 2 hours - 1 to 2 people
Tables - 1 to 2 hours - 2 to 6 people
Decoratiing - 2 to 6 hours - 1 to 2 people
 
Running the Event
 
B&B - 72 hours of responsibility - being hosts, witnessing competitions, ensuring awards and prizes are given, etc.
Steward - 72 hours of responsibility - organizing and troubleshooting, first on site/last to leave.
Entourage of the B&B and Baronial Guard - assist the B&B so that they can take care of their responsibilities. 72 hours of responsibility that can be split amongst all those who help.
Gate - 24 hours of responsibility for both the Treasurer and the Head Gate Keeper. Plus people to work each of the shifts (6 to 12 people)
Marshal in Charge (all types) - 6 to 8 hours of responsibility dependant upon format of the activity plus 2 to 10 others to help marshal and run list.
Feast Cooking - 24 to 48 hours of responsibility - prep, cooking, cleanup, organizing workers and equipment, and clean up of equipment. Plus 6 to 8 helpers
Waterbearers - 6 to 8 hours of responsibility for 2 to 10 people
Hat Lunch - 3 hours of responsibility - set up , display, takedown, cleanup
Herald - about 6 hours of responsibility - any courts, informing camps, field heraldry, etc plus 2 to 10 others to help
A & S - 4 to 6 hours of responsibility - set up, tend , ensure judging, take down
Feast Service - 1 to 2 hours before feast to 1/2 hour after feast - 6 to 10 people
Feast Clean up - 2 to 5 hours - 2 to 4 people
Table Setup/Take Down - 1 to 2 hours before feast and 1 to 2 hours after feast - 6 to 10 people
Officers - While on the event site - by Corporate and Kingdom Law whenever your are at an event (especially your own) you must ensure that people abide by SCA and Modern Laws and report them to the proper authority if you see any illegal activities that jeopardize the SCA (drug use, minors drinking, family violence, etc)
 
Take Down
 
Green Tents - 2 to 3 hours - 6 to 8 people
Garbage/lost items/etc - 2 hours - 2 to 4 people
White pavillions - 2 to 4 hours - 2 people
List Ropes - 2 to 3 hours - 2 people
Kitchen Equipment - 2 to 4 hours - 2 people
