  Brew Day
  At abode of
H.E. Don Charles d'Alsace le Cervoisier

On July 4th A.S. XLV, Don Charles once again hosted the brewer's guild at his wonderful abode. My good lady and I along with Lord Oddus Torcoletti were the first to arrive. Once Don Charles had opened up the brew barn, we set forth with the task of cleaning bottles, pots, and many of the items that were going to be used on this day. I had the task of cleaning the large fermentation bottles known as carboys that Centurion Michael of Gravesend had loaned to me to use. While I was undertaking this task, my wonderful lady helped Lord Oddus get the fires ready to start brewing. We were soon joined by John de Athos who jumped in, making the barn ready for the events of the coming day. Soon after Daire Aeson Tuan McShedanagig and Graddon Queneth soon joined our ever growing group. Finishing up getting the fires going Lady Rosalia and Lord Oddus announced that we were ready to start brewing. I had the honor of going first. I chose to make a honey/wormwood beer. First, taking water in the amount of one third of the pot I was using, I chased the water to a running boil. Adding first light malt in the measure of four then one pounds, without the heat of the fire. I mixed the malt into the water, to force the water into wort. Once the fire was added back to the water and chased to a boil, hops in the amount of three less two ounces were added along with honey in one then two pounds. When the hour was three quarters past, one forth and one forth again ounces of wormwood were added. At then the end of the hour the pot was removed and all of the heat was chased away. The water had been changed into wort and readied for placement in the carboy. With the aid of Lord Oddus the wort made its way in to the carboy.

Having the wort in the carboy made for the adding of honey in the amount of four less one pounds into the wort, after it had been put to the fire. The shaking of the wort brought forth the foam. Zero point one seven ounces of a yeast for champagne was shaken into the wort. I would be remiss if I had not pointed out my wonderful lady wife Rosalia helped in the changing of the water to wort. It was during this time the traveler and friend simply known to us as Bob brought forth many wonderful items used in brewing. I was offered a carboy to be my own. It's price was just so I bought one. We also had a visit from H.E. David Saint David and his lady wife. Also coming in from the northern part of the Barony was Lord Pasquale Pace.

Lord Oddus not only started brewing one beer but two different beers at the same time. Using more then the simple ingredients that I chose to use, he worked as a mad alchemist in search of a way to make lead into gold. John de Athos also brewed a beer that if it's flavor matches it's nose should be a very fine beer. I would be rude and ungrateful not to share the fact that Don Charles spent many hours of the day and much of his own time helping all of us that who came in search of the knowledge of brewing. Every one that was brewing on this day at one point during the day picked up one of the many texts that Don Charles had supplied for us to learn from.

It was yet another enjoyable time in the Barony of Raven's Fort, being with good friends and enjoying their fellowship in a day learning, growing and sharing. Over the next few months I hope to update with good news on the Honey/wormwood beer that I am thinking of calling Artemisia Beer.
