Medieval spices

Having looked at household accounts, albeit late period ones, and the
amounts that Chicard uses in Chicard on Cookery - a late 14th century
account of the food/recipes done at a major Savoy feast, it is pretty
clear to me that massive amounts of spices were *not* used. Sure, a lot
was frequently purchased at a time - but it was to be used over a longish
period of time, and for a large number of meals.

If the world were merely seductive, that would be easy. If it were merely
