Actually this is not quite a modern concept after all.
Many late medieval feasts end with wafers and ypocras as a digestive
and in the english renaissance  the feast was often followed by a banquet
which was a seperate course composed of sweets  (essentially a modern
dessert buffet)
read "Banquetting stuffe" edited by C.Anne Wilson for more than you ever
wanted to know on the topic :->

Eden, who often ends her medieval meals with wafers, cause they're yummy.
