You asked:
Hmmm, here's a question, what did medieval fisherman and sailors eat?  We 
all know the later centuries of British naval fare (biscuit, salt beef or 
pork, peas, grog, etc.) Our Canton of Ivyeinrust is holding a sea 
collegium in the near future, and I'd like to help with the cooking. 
Any recipes for salt fish, etc., or sources where I can find recipes would 
be greatly appreciated!

The first lists a number of books. Perhaps one of them will be useful.

The second has a number of messages about medieval sailor's food. You are
right that much of what is thought of as sailor's food is specific to the
longer voyages of the later centuries. It does have an interesting recipe
using "hardtack", beans and other items I've forgotten.
