Welcome to cooking : No, pumpkin pies are not likely to be very period to
vikings.

Depending on where they happened to be, the viking cook could have
produced any or all of the following : 

apple pie/tart
cherry pie/tart
gooseberry pie/tart

governing factor would be access to an oven.

PS.  If you are using canned pie filling (I know its not period, but lets
cut a beginning cook a little slack ok?), experiment with adding a little
extra spice (cinnamon, cloves) to the filling.  I don't know  enough about
gooseberries to venture a recommendation there.
