There was recently a very good conversation on the Rialto about
Middle East feasts. Since I haven't mentioned it (grin) I will now
mention that you might want to look at this file in the FOOD

If you are going to make a feast of sotelties, keep in mind that not
all of these are edible. I also doubt that any medieval feast was made
solely of sotelties. This file (which has been previously mentioned) does
have a large number of edible sotelties described:

Sotelites require a lot of work. I'm not sure that it is feasible to
do a whole feast of them, although a small feast might be doable. Please
keep in mind the theatrics involved in presenting sotelties. A friend of
mine spent a lot of time making the sotelties where a quail is stuffed
inside a larger bird which is then stuffed inside a chicken which is then
stuffed inside a turkey or other large bird etc. Each layer being set
off by different color seasonings. Unfortunately, when she took it to 
the potluck, the kitchen staff proceeded to carve it up indiscriminately
and pile it on some plates and set it out in rather poor light. Thus
most of that hard work went for naught.
