Yes,  you are right. It takes about 6 months for a vinagar brine to mature. Much 
Less for a vinagar sugar soultion, 2 to 3 weeks. 
	I don't know about you, but we don't always know that we are cooking a 
feast for an event 6 months in advance. Last feast my household only had 3 weeks 
notice.
