I think creativity is just fine as long as the cook has sufficient
experience cooking period dishes to know whatthey are doing. I wouldn't
base a whole feast on it. Certainly the majority of recipes were not
written down. For myself, I haven't yet tried anything close to all the
period recipes out there yet. And I get plenty of creativity just from
figuring out the amounts of things to put in the recipes that do exist
and trying them until I like them.
