Re Yeast in period,

May I refer one and all to two books: 

English bread and yeast cookery : Elizabeth David

Food in England : Huxley (long oout of print, but now available again in a
vastly overpriced edition from Little Brown)

Both books spend a lot of time on yeast in english cookery.
