I don't know if it is period or not, but I grew up in a Polish/German 
family in Texas. I was told the reason American-Polish sausage is so 
much spicier than real Polish sausage is because there is a chemical 
in the "hotter" spices that helped to preserve them in the heat. I 
don't have any facts to back it up, just what my grandmother told me 
and her mother told her.
