Period varieties of carrots were both white and red. Just not orange. You can
come up with an almost identical period carrot by collecting the seeds of
Queen Anne's Lace Wild Carrot). Plant it in a patch. In the fall dig up the
roots, replant ONLY the biggest roots. Repat this a second and a third year.
In the third year collect only seeds from the biggest roots. The product of
these seeds is almost identical to Medieval Carrots. They are stronger
flavored than modern carrots and a bit tougher and stringier, but well worth
the effort of producing them.
