I like serving a cold pork roast (pork loin) with sage or garlic sauces.
I rub the roast with a variety of period spices (no I don't have a source
for this practice), roll it up and bake it. I then make a period sage
and/or garlic sauce to serve with it. Its very good and well liked around
here. I also like eating Lombard Chicken Pasties cold and take these to
many events for lunch.
