Yaknow, thinking about the recipe, I believe that they must have been
going for the sweet effect.  The recipe calls for powder douce, which
would be a sweet flavor.  Also, I have some *barely post* period Italian
recipes for fava beans that have them sweetened with honey, or served
sprinkled with sugar.  A sweet onion in a sweet bean paste seems
reasonable.
