Hi, Katerine here.  Maeve asks about medieval spices for a sampler.  I
would add saunders, and if you are branching into herbs, hyssup.  Of 
course, if you're including some that are also common in modern user
(as I infer from the pepper), cloves, mace, ginger, and cinnamon.  Also
possibly mustard seed (the brown is particularly nice, I think), and
cumin.
