Hi, Katerine here.  Adamantius asked for the reference in _PD_; Brid
said she couldn't find it.

It's in the notes on recipe 112, Creme Bastard.  The actual statement is 
"medieval cooks couldn't whip cream."  Note that this need not imply 
impossibility; it might simply mean that they didn't know how to.  In any 
case, Hieatt, Hosington and Butler do not give a citation.
