Hi, Katerine here.  Adamantius provided some good advice in response to
Morgan's question.  I'm going to add one note only.

Talk to your local butchers, wholesale meat providers, and so on.  *Ask*
them exactly what they recommend in response to this question, and what
it will cost.  Costs vary from place to place and provider to provider.
They may astonish you.
