How do you like to see a reecipe formated? Me, I like the original text, and
lots of specific citations and footnotes to bakc up any claims made by the
author. Then would come the modern recipe, with explainations for any deviance
from the original (ie we couldn't find isinglass, so we used gelatin).

I like to see the original in the original language, if it is not middle or
old english a translation would be lovely as well.  Definitely citations and
footnotes, and definitely a glossary.
For instance "Pleyn Delit" is organized fairly well, but everyonce in awhile a
comment is made that just isn't backed up- right now I am wondering about
"medieval cooks couldn't whip cream"  What does this mean?  They didn't have
whisks ;)?  They couldn't separate cream? or there is some modern process that
makes cream whipable.
Oh and I like when citations and references are footnoted, then you can see
the project as a whole unto itself, and still have the notes on the same page.
