In reference to Anne-Marie's question: If I do not trust the
translator, I like to have the original...then either the transliteration or
translation. I usually don't pay too much attention to redactions made by
the author, as they make assumptions about ingredients I can get and processes
I am familiar with. Unless the item is a baked good, everything is
proportional...so why worry? My general bent in seasoning is to have an
unknown piece come out tasting like Indian or S.E. Asian-style.
