I have no idea what "Icelandic Chicken" is, but if you can cook it on a
stove, or in an oven, you can cook it over the fire.

Sure you can cook it over the fire. Take bread dough, any variety. Put it on
a circle of parchment or heavy duty foil big enough to slip easily inside a
cast-iron dutch oven (I've use aluminum modern ones on a pinch) that has
been pre-heated by sitting it in the coals. Put something on the bottom of
the pot to prevent direct contact with the dough/foil: trivet, rocks, metal
tent stakes, etc. Put dough in dutch oven. Put on lid. Put a good shovelful
of coal on the lid (upside-down lid of you must). let sit 5 minutes. Check.
If cooking nicely, transfer to coals for a few minutes and then take back
off again, just to maintain heat. Check again. use traditional bread
'doneness" tests (thump the bottom to see if it sounds hollow).

Either are good. Freeze them before transporting.

Safer, yes, but not necessarily tastier.

I suggest you cook the whole stew (I assume) ahead of time. The flavors will
meld better.

Hold tight, Grommit. Think of Lancashire Hotpot.
