It's my understanding that saunders was the powdered wood (or bark?) or
a variety of one of the sandalwood trees. I seem to recall reading
someplace that saunders, as such, is virtually extinct. However, there
are other varieties of red sandalwood that make a good substitute, and
you can get it already powdered at a good herb store, which is where you
probably will go to get your cubebs, etc., anyway.

For what it's worth, I understand some people are allergic to
sandalwood, but it does produce a nice carmine shade in foods.
Experimentation is probably advisable.
