Basically by reading through lots of period cookbooks, or finding someone
else who has done so, and locating the same recipe in one of them.

Failing that, if the dish has a distinctive name you can trace the name by
looking it up in the Oxford English Dictionary_--while remembering that the
name might have changed its meaning over time. Or you can look through the
relevant archaeological literature.

On the whole, I think it makes more sense to start by looking through a
period cookbook for interesting recipes instead of starting with a recipe
that might possibly be period and trying to find a period version of
it--but that is up to you.
