Also another who is looking for a medieval chocolate cake recipe. Is
chocolate even period?

Merry Yule, Puck

Chocolate is barely within SCA period and certainly not in common use,
so a medieval chocolate cake is out. It's original use was as a bitter
beverage, later sweetened with sugar and milk. The Spanish brought it
to Spain about 1527, but it did not really catch on in Europe until
mid-17th Century. The great use of chocolate really didn't get underway
until the 19th Century after Conrad J Van Houten developed the process
to extract the cocoa oils (1828 C.E.).

For the Current Middle Ages, chocolate is period at the whim of the
Crown, and I would use a version of Hersey's Best Chocolate Cake recipe.
I would not try to fob it off at a feast.
