Here's some stuff I posted a few months ago. Have fun.

Pierogi (Polish Dumplings
Amount Measure Ingredient -- Preparation Method
- -------- ------------ --------------------------------
2 Cups sour cream
4 1/2 Cups flour, all-purpose
2 Tablespoons butter -- melted
2 egg
1 egg yolk
2 teaspoons salt
2 Tablespoons vegetable oil
Mix all ingredients together in a large bowl.
Knead into a soft, pliable dough.
Cut in half.
Let rest, covered, for 10 minutes.
Roll out dough into a thin circle.
With a cutter, cut out 3" cirles.
Put about 1 Tablespoon of filling in the center of each circle.
Fold over and crimp the edges to seal the dumpling.
Cook for approx. 10 minutes in boiling salted water.
The potato filling is 1 ? lbs. of potatoes mashed with butter and milk
and then mixed with grated cheddar cheese and cooled.
