I'm not sure if I have a recipe for a fast mead or not, but you might
want to take a look at these files in the BEVERAGES section of my
SCA Rialto Files:

mead-msg         (113K)  8/ 5/96    Making mead. Honey based alcoholic
beverage.
brewing-msg       (14K) 12/30/96    General brewing info and sources.

There are also files in this section with recipes and info on cider,
cordials,
kumiss, kvas, wassail, wine and other period and SCA beverages.
