Exactly.  It's a common term for making something into a modern recipe, with
quantities and cooking times and temperatures.
  
  Finished product:  A beautifully poached fish on a platter (no head,
  no tail), surrounded with sprigs of parsley and slices of lemon,
  drizzled with lemon juice.  Yum!

I'm not here to pass judgement, but it appears that it's at least as good as
