Good point.  Black pepper was a spice used by the wealthy in copious
quantities whe the were flaunting their wealth at mealtime.  It seems
reaonable that other spices were used similarly.  Not to salvage foul
food, but to show their wealth and access to possibly expensive spice.
I do realize that this doesn't follow with the mustard, due to its ready
availability, but does offer parity to the other recipes of heavy
spicing.
