As long as the person taking reservations passes this along to the cook, this
is sufficient for my purposes.  I was in close contact with both the autocrat
and the reservation-taker; the person who called me had been referred by the
autocrat.  Even when this is not feasible (for whatever reason), it still
seems to me to be the responsibility of the people with the dietary
restrictions to make their restrictions known as far in advance as possible,
so accommodations can be made.  However, it is the responsibility of the cook
to provide a varied feast so those who don't like the tastes of certain foods
can still find other dishes to satisfy them.  For all but those with the most
extreme food restrictions, this should allow them to build a pleasant feast. 
I have been to feasts where I didn't eat half the dishes for one reason or
another (some dietary restrictions, some personal preferences), but still went
away full.
