When someone goes to a restaurant, if they have food restrictions, it is 
their responsibility to call the restaurant ahead of time and find out if 
they can eat anything on the menu. 

For my own part, I try to make sure that there's something for lacto-ovo 
vegetarians in every course, and ideally something that will make a 
complete protein for them.

Mostly I put the burdne on the individual. If they have dietary 
restrictions, the onus is on them to make sure they don't buy feast 
tickets for a dinner they can't eat, and the onus is on me to make sure 
that the menu and ingredients are available BEFORE they purchase 
non-refundable tickets. And if they tell me far enough in advance, I may 
even adjust a dish here and there for them (like for a friend who cannot 
eat wheat or dairy. I made sure there was at least one or two dishes in 
each course that she could eat, and I told which they were ahead of 
time). Oh...and when I say "far enough in advance", I'm talking about the 
months and months of menu planning stage. Not the right-before-the-feast 
stage!

could cook that way....if she really really had to....
