                                               How about a reverse challenge?
   Those of us who are novices could print a recipe from a "period" source, and
  those teachers could redact them, with the hows and whys and wheres.  Like an
  online collegium.  Any takers?

I'm not sure I'm qualified, but I'd be happy to play.
