  The only problem I see is that no French Count would stand for just drinking

That ain't no damn French Count, darn it!  At the time, France was far from
united, and Savoy was independent.  (Over the next many hundreds of years,
it will be Prussian, Italian, French and Swiss.  Right now it's French.)
  
  Give him all of the left over wine with the warning that was all there is 
  (unless he has a private stock and the wine listed was "kitchen wine") and 
  threaten to give him just water if he drank it up in the early stages of the
  meal.

He'd water it.

I'd thought about that when making the list, and I decided (in my head) that
he gave the cooks the wine he could spare for dinner, and the choicer
beverages he retained.  Because you are right: very few period people would
have drunk water, even with the skanky lemon in it.
  
  That little quibble aside, very nicely created.  I guess I'll have to re-read 
  the ingredients and take a stab at it sometime.  (grumble...grumble)
