I've made indian flatbread a few times. (sorry cannot think of the name)

in general the directions were:

mix water, flour, and optionally salt to get a fairly wet dough.
knead for 8-10 mins
rest for 30 mins
knead for 10 (it should be pretty wet/sticky at this point.)
pinch off pieces of the dough (about 2.5cm d balls i guess) and roll
out to a fairly thin sheet (.25cm?) (the moisture of the dough is
really more important for the inside... so use extra flour for
handling and rolling)

seal both sides on a hot griddle (you get the feel for when it's
sealed enough -- about 20-30 secs a side) then put directly on high
heat (coals, electric element, low flame, oven heating element)  The
idea is that the moisture within should vaporize quickly.  the sealed
edges maintain integrety and the thing puffs up (rather quickly) flip
it over before it burns and cook the other side for a few seconds. 

now, when i did it, it was on a griddle (iron skillet)  i'm not sure
why you have the baked in the oven requirement... but i see no reason
you couldn't use  the griddle in the oven.  heat it up (oh, i'm
guessing) to about 250-300 deg. 

my first batch i made with a mix of wheat and white flours, and
cornmeal. It's skip the cornmeal as i think it messed with the grain
of the dough... (corn flour would be fine though)  Sorry i didn't keep
numbers.... i cook by feel usually, and since the ingredients are few
and cheap, experiment!

play with it, get the feal for it.  The result was pretty good (at
least there was none left :)  it was great for dipping into Gretchen's
(Margaret MacDubhShithe) savory cheese.... yum...  obviously good for
hummus, chutneys, rice, as a spoon, etc.. :)

documentation... we don't need no stinkin documentation! (but heck, if
you have it, it would at least make this post  useful ;)
