SC - Request for sources, input and advice: German Feast

Greetings!

I've been approached by one of my friends to head up the kitchen and 
plan the feast for the Shire of Caer Galen's major annual event, Caer 
Galen Midwinter.  The tradition has come about to do a "color court", 
that is, to encourage people to wear existing garb or make new garb 
on the stated color theme.  This year it's:  red.

Also, the autocrat informs me that she wishes the "where" theme to be 
German and Flemish.

So:  German and Flemish food sources, anybody?  Special bonus points 
for "red" food?  (I'm definitely not making the whole thing red, but 
a few featured dishes, sure!)

Oh, quick second question:  I can't find my period gingerbread 
recipe, and I volunteered to make some for a gift basket.  anybody 
got it?  (I'm sure several of you know the one I mean, it seems to me 
mention of it flashed by several days ago.)
